Hola! Señorita Tillie here reporting back on my Spanish feast last month in Belgravia.
Ametsa with Arzak Instruction is located at The Halkin by COMO hotel. It’s a unique collaboration between Elena Arzak – voted Veuve Clicquot World’s Best Female Chef in 2012 – along with her father Juan Mari Arzak, and Mikel Sorazu, Igor Zalakain and Xabier Gutierrez.
The focal point of the restaurant is a wave-like ceiling, created from seven thousand six hundred delicate glass receptacles filled with ten different vibrantly coloured spices. Part sculpture part chandelier, it forms a warm glittering canopy. Spices featured in the ceiling include cumin, turmeric, mustard, ginger and paprika amongst others and are all spices that are used in Spanish dishes.
Their approach is rooted in the traditions of ‘New Basque Cuisine’, pairing the earthy flavours and techniques of Spain’s Basque region with modern, surprising twists featuring locally-sourced and organic produce from land and sea.

Plato de Jamón Ibérico ‘Joselito’ (Iberico Ham plate)
Sopa de Tomate y Fresas con Salpicón (Tomato & Strawberry Soup with Seafood Salad)
Ensalada con ‘Txangurro’ (Spider Crab Salad)
Chipirones en su Tinta (Black Ink Squid) and Merluza con Pimientos Asados (Hake with Roasted Red Pepper)
My favourite savoury dish was the squid, closely followed by the Hake, but it was all over shadowed by the sumptuous feast that was dessert. I’m a sweet tooth kinda gal and this definitely satisfied my sugary needs.
I was served the Torrija de Mango y Coco (French Toast with Mango and Coconut) and Pastel Fluido de Chocolate con “Piquillos Helados” (Chocolate Fondant with Piquillo Ice Cream) – MUY DELICIOSO!
The innovative Spanish tapas meets fine dining menu, coupled with fantastic service make Ametsa a definite hot spot.
